Coconut Bay Beach Resort & Spa has opened its first fully vegetarian and vegan à la carte restaurant, Seasons Veggie Bistro.
According to a press release, ranked among the top ten traveller-rated resorts in Saint Lucia on TripAdvisor, Coconut Bay is responding to increased demand for plant-based cuisine.
“Our travel partners can now confidently offer their clients an all-inclusive getaway that not only caters to vegan and vegetarian preferences but does so with exceptional flavor and quality,” said Mark Adams, President and CEO of Coconut Bay Beach Resort & Spa.
“Seasons Veggie Bistro represents our continued commitment to sustainability, with 82% of our organic ingredients sourced from within a 10-mile radius of the resort, including produce from our two on-site greenhouses.”
The restaurant features farm-to-table dining with a menu built around seasonal produce and non-processed ingredients.
Guests can begin their meal by preparing fresh hummus tableside using a mortar and pestle. Signature dishes include Eggplant Napoleon with cashew ricotta and pomodoro sauce, Grilled Cauliflower Steak with chimichurri, Tofu Pad Thai Noodles, and Black Bean & Tofu Manicotti in Romesco sauce—vegan desserts such as Tofu Chocolate Cheesecake and Chia Coconut Trifle round out the menu.
With the addition of Seasons Veggie Bistro, the resort now offers nine dining venues, accommodating a wide range of dietary preferences, including gluten-free options.
Coconut Bay emphasizes farm-to-table and ocean-to-table sourcing, collaborating with local farmers and fishermen.
The resort is also undergoing a major renovation, with a complete rebuild of its guest rooms.
Half of the rooms are expected to be finished by summer 2025, and the remaining 125 by the end of 2026. Updates include new plumbing and electrical systems, modern fixtures, updated bathrooms, and energy-efficient air conditioning.
