Air Canada announced the addition of Michelin-starred Chef Masaki Hashimoto to its in-flight menu.
Chef Hashimoto's creations are now offered in Signature Class on all flights between Canada and Japan.
"We are proud to present Chef Hashimoto's exceptional culinary artistry in our Signature Class experience," said Scott O'Leary, Loyalty and Product at Air Canada.
"His journey and dedication to Kaiseki cuisine have enriched Canada's culinary landscape, and we are honoured to celebrate this onboard."
Based in Toronto, Chef Hashimoto is the owner of Kaiseki Yu-zen Hashimoto, where he specializes in Kaiseki, a traditional multi-course Japanese cuisine.
His menu, introduced on March 1, includes dishes like sautéed lotus root, sesame tofu with wasabi sauce, and beef sukiyaki with tofu, scallions, and napa cabbage.
"It has always been a lifelong dream of mine to bring an authentic Japanese in-flight dining experience to travellers," said Chef Hashimoto.
"Partnering with Air Canada is truly an honour for me, as it brings together the two places I now call home—Japan and Canada."
In the spring, Air Canada will further enhance the experience with traditional Japanese dishware by Noritake. The partnership is part of the airline’s effort to upgrade its food and beverage offerings, which now include over 100 new globally inspired dishes.
Air Canada operates up to six daily flights between Canada and Japan, including routes from Vancouver (YVR), Toronto (YYZ), and Montreal (YUL).
