There’s a simple updating of a resort, and then there’s a complete reimagining of a resort. And reimagining is what describes Sandals’ investments in three of its iconic Jamaican resorts, Sandals Montego Bay, Sandals Royal Caribbean, and Sandals South Coast—to the tune of $200 million!
The three resorts are among those that were closed last fall after Hurricane Melissa hit the island nation. Sandals took that opportunity to truly transform these three properties, to better align them with that the company calls Sandals 2.0.
For travelers, the wait is almost over, as the three resorts will be re-opening over the next handful of months. First up, Sandals South Coast will reopen on November 18, 2026, followed by both Sandals Caribbean Cay (formerly called Sandals Royal Caribbean) and Sandals Montego Bay, which will open their doors on December 18, 2026.
What will guests find at the transformed resorts? First will be dramatic arrival moments, setting expectations high for a memorable vacation. They’ll also find new accommodation categories, expanded culinary offerings, redesigned pools, relaxing social spaces and lounges, and the wonderful Sandals spirit.
Here’s a look at some of the expanded dining options to expect at each of the resorts:
Sandals Montego Bay: At Scrimshaw the sea is the focus, with the freshest local catches with a global twist. There’s also a lobster tank and a full bar. Over at Buccan, gastronomy means charred meats and flame-kissed veggies, with the intention of sharing among friends and family. Heart & Sol gives some New York deli energy, with farm-fresh produce incorporated into bowls, sandwiches, juices, and easy bites.

Parisol Beach Clubis an open-air spot by the sea, ideal for long lunches, easy breakfasts, and cocktails that turn one round into two or more. It is located right on the beach, with a laid-back feel and amazing views. And Tesoro is the place for some traditional Southern Italian pastas, made-to-order Neapolitan style pizzas, and delicious artisan breads.

Sandals Caribbean Cay (formerly Sandals Royal Caribbean): Some of the delightful additions here include Suppa, a homegrown, supper-style gathering with bold Jamaican flavors at every turn. Over at The Strand (named for the Dutch word for beach), seafood is the star, along with the prevailing sea breezes and endless views. And make sure to stop by the new rum bar, Keynote.

Sandals South Coast: There will be six new or refreshed dining and bar venues, with guest favorites (Butch’s and Blum) as well as an upgraded buffet with higher-quality food options. Blum Coffee features Blue Mountain beans brewed your way, be it espresso, cold brew, or slow pour. Additionally, there are island spiced pastries to enjoy, whether you like your coffee fix in the morning or the afternoon. And Butch's Island Chop House will feature dry-aged steaks, prime Midwestern beef, and fresh seafood. A curated selection of wines that you’d expect from a high-end steakhouse are on tap, as well.
