Rimrock Banff Unveils Culinary Program Ahead of Grand Reopening

The Rimrock Banff, slated to be Canada’s first Emblem Collection from Accor, has revealed what its culinary program will look like when the property reopens its doors later this year. 

Anchoring the food and beverage program are four dining venues, each with a distinct offering. The signature restaurant is Parker’s Table, named for Elizabeth Park, a  founding member of the Alpine Club of Canada. The menu will feature seasonal ingredients driven by partnerships with local farmers, fishers and foragers. It will be complemented by a globally-inspired wine cellar and a cocktail program” rooted in Canadian botanicals and spirits.”

Rimrock Social and The Listening Room each feature cocktails and indulgent bites in a thoughtfully designed setting. Rimrock Social is “an elevated gathering space framed by panoramic mountain views” while The Listening Room is tucked away in the resort that features “high-fidelity sound and warm acoustics” for a space that will blend “curated vinyl sets” and rotating DJ residencies.

The fourth space is the relaxing Rimrock Market, the resort’s mountain-side coffee bar and biergarten, where guests will be encouraged to fuel up for their day’s adventure and chill out afterwards. The Market will be pen throughout the day with craft coffee, casual fare, chef-prepared picnic supplies and an easygoing atmosphere, complete with an outdoor terrace with firepits and relaxed seating.

Emblematic Ingredient 

Each Emblems Collection property features an “Emblematic Ingredient,” selected for its cultural significance, connection to the land and harmony with nature. At Rimrock Banff, the chosen ingredient is alpine honey. 

According to the hotel, alpine honey is known for both its wellness properties and “its role as a universal symbol of welcome.” The locally-sourced honey will appear throughout the Rimrock guest experience, in wellness offerings as well as on the menu..
