Distinctly Local: The Clayfield Opening in Niagara-on-the-Lake

There’s a new hotel poised to open in the beautiful Niagara region. The Clayfield is an Unbound Collection by Hyatt hotel — the second to open from the portfolio in Canada. 

The hotel is located in the Clayfield Commons, a new mixed-use neighbourhood made up of independent retailers, makers and creators, restaurants, cafes, and neighbourhood services. The Commons also includes a landscaped public green which is home to a seasonal Farmers' Market.  

The Clayfield was created by Stratus Vineyards founder David Feldberg and local developer John Hawley and his family. They have strived to create a hotel that feels like part of the community and offers guests a way to feel like their visit is a “distinctly local experience”, drawing on the region's wine, food, culture and sense of place, giving visitors a new way to experience Niagara-on-the-Lake.  

"When I travel, I always want to discover places that feel connected to where I am," says Feldberg. "That was our ambition with The Clayfield. Niagara-on-the-Lake is an extraordinary place, and we wanted to create something worthy of it. If guests leave feeling more connected to this community than when they arrived, we've accomplished what we set out to do.” 

The Clayfield is managed by Montreal-based Urgo Hotels Canada, a hotel management and development company with more than 40 years of experience in the hospitality industry. 

According to Montreal-based designer, Sid Lee Architecture , “The Clayfield's architecture draws inspiration from the Niagara Escarpment and neighbouring vineyards.” They have used natural materials, including warm oak, natural stone and woven textiles, throughout the hotel, while floor-to-ceiling windows connect guests with the surrounding landscape. 

The food and wellness offerings also draw on the region’s unique characteristics, with dining at Terrain focusing on seasonal, ingredient-driven cuisine inspired by the farms, orchards and vineyards surrounding the property, alongside a wine program focused on Niagara wineries and small-lot producers. The Rooftop at The Clayfield is Niagara-on-the-Lake's first rooftop patio, giving visitors a view of the charming landscape while The Spa at The Clayfield “draws inspiration from the winemaking tradition of assemblage.”

"We saw a unique opportunity to create a special place that celebrates the abundant creativity of Niagara-on-the-Lake and becomes part of the everyday life of residents, while giving visitors a fresh way to enjoy all that our wonderful community has to offer," says Hawley. 

The 102-room hotel is open for reservations now, with an official opening date of Sept. 17, 2026. Local dignitaries gathered for a ribbon-cutting ceremony to celebrate the hotel’s debut and introduction to the community.

To celebrate its opening, The Clayfield has introduced two exclusive offers for reservations made through October 31, 2026, with stays valid through April 30, 2027. Guests staying two nights or more can choose The Collector's Stay, offering 2,500 Bonus World of Hyatt points per night, or Savour the Stay, which includes a $100 dining credit at Terrain.
